Growing Health: A Regenerative Farm Tour in Central NJ

Growing Health: A Regenerative Farm Tour in Central NJ

June 19, 2026

Head out to Central New Jersey for a one-of-a-kind immersive farm experience as we visit two inspiring regenerative farms — Cold Brook Farm in Oldwick and Ethos Farm in Long Valley — for a day of learning, connection, and fresh air. We’ll get closer to the source of our food while deepening our understanding of plant-powered living and sustainable agriculture.

The tour begins at Cold Brook Farm, where farmers Jason and Deb DeSalvo will guide us through their diverse and abundant landscape. Their farm showcases permaculture in action, with over 70 varieties of nuts, grains, fruits, and vegetables.

We’ll then caravan to Ethos Farm, 20 minutes away, a regenerative organic farm and healthcare model, where Jason and Nora Pugliese, Ethos Farm Manager, will continue the conversation. You’ll gain insight into how the production of whole plant foods grown in healthy soils serve as “living medicines” to prevent and reverse chronic disease and advance planetary health.

Following the tour, enjoy a relaxed picnic (please bring your own lunch in a cooler) on the beautiful grounds of Ethos Farm, with the option to purchase freshly-harvested offerings from the Doctor’s Farm Market and nearby farms. Ron Weiss, MD, Ethos Farm to Health founder and PPMNY Healthcare Advisor, will join us over lunch, adding to the opportunity for meaningful discussion and connection.

Participants are welcome to stay into the early afternoon, with the option to attend Ethos Farm’s Farm & Garden Tea Social beginning at 2:00 PM — please register for that event separately if you intend to stay. To Register for the Farm & Garden Tea Social https://www.zeffy.com/en-US/ticketing/farm-and-garden-tea-social

About Our Speakers:

Jason DeSalvo grew up in suburban New Jersey, co-founded Strategic Outpatient Services in 1995, and continues to serve as its CEO while also contributing to several nonprofit boards and community organizations. Now a regenerative farmer at Cold Brook Farm, he combines his business background with a passion for sustainable agriculture, whole foods, and an active outdoor lifestyle.

Deb DeSalvo began her career in New York radio before becoming a stay-at-home mother, later evolving into a Master Gardener and environmental educator focused on birds and native plants. She now supports conservation efforts through leadership roles while embracing her interests in nature, baking, reading, and family life.

Nora Pugliese started as a backyard gardener, becoming an apprentice organic farmer in 1994 at Farmer John’s Organic Produce — the first organic farm in New Jersey. By 2000, she started her own organic CSA and ran it for over twelve years. In 2014, Nora became the farm manager at the Ethos Farm to Health, where she transitioned the farm to a certified organic operation and acquired certification from The Real Organic Project.

Ron Weiss, MD, is board certified in Internal and Lifestyle Medicine and is Assistant Professor of Clinical Medicine at Rutgers New Jersey Medical School. He is the founder of Ethos Farm to Health and practices primary care in New Jersey and New York.

Presented in partnership with Cold Brook Farm and Ethos Farm to Health

Open Space at Ethos

Every word associated with gardening can be applied to our lives beyond the soil. Gardening can teach us a great deal about how to live life. It is a metaphor we can turn to again and again, especially in times when we need reassurance and inspiration.

Growing a garden is an act of hope. Whether you are planting a container of parsley or an acre of corn, the miracle is all the same. It is an opportunity to renew ourselves and our world every single day. It is a sign that we believe in the potential for healing and regeneration for all of us.

Open Space at the farm will provide a hub in which to gather and engage in an ongoing discussion of topics we care deeply about. No prep or materials needed, just come with your thoughts, ideas, questions, and musings.

Healthy Radiant Skin

Join Board Certified dermatologist and lifestyle medicine expert Dr. Jessica Krant to explore the powerful connection between gut health, nutrition, and radiant skin from the inside out!

Jessica Krant, MD, MPH, FAAD, FACLM is a board certified dermatologist in New York City as well as one of the first dermatologists to be board certified in Lifestyle Medicine, a new field of study focusing on six pillars of healthy lifestyle choices to obtain optimal health and healthy aging as naturally as possible.

Dr. Krant’s passion is the overlap of these two fields: achieving healthy aging and healthy skin from within. Knowing that it’s always easy for us to learn what to do, but hard to actually do it since mental health and healthy habits are a two way street, Dr. Krant also became a certified life coach to help her patients and her coaching clients manage life realities and life stressors that get in the way of our health and dreams.

Dr. Krant is currently President of the New York County Medical Society, Assistant Clinical Professor of Dermatology at SUNY Downstate Medical Center, Delegate to the American Medical Association representing Dermatology, and serving on the Medical Advisory Board of Plant Powered Metro New York. She does not see private patients at Downstate or King's County Hospitals, but is proud of serving for more than 20 years as an attending supporting the Dermatology Residents of this great program.

Introduction to Mycology & Agroforestry Systems

This introductory course explores the ecological and functional roles of fungi within agroforestry systems, with a strong emphasis on the identification of healthy wild mushrooms and understanding their nutritional benefits. Participants will examine how fungi interact with trees, soils, and microbiomes, and how environmental conditions influence the production of beneficial compounds. The course integrates foundational mycology with practical field identification skills, focusing on locally occurring fungi in Morris County, New Jersey.

Taught by Bruce Filacroft

Bruce Flitcroft is the President of Mendham Mushrooms LLC, an organic agroforestry business growing wild-crafted, functional, and culinary mushrooms. After more than 30 years in the information technology industry, Bruce retired to pursue his passion in organic agriculture and mycology, leveraging his background in Biochemistry from his undergraduate days at New York University.

Farm to Table
May

Farm to Table

Farm to Table (In-Person)

Regular price

$175.00

What do we do with all that gorgeous Ethos harvest? We gather, cook, and learn—together.

Our Farm to Table Cook & Dine class is an immersive, hands‑on experience that celebrates the journey of food from farm to plate. Participants chop, blend, and cook with fresh, seasonal ingredients harvested directly from Ethos Farm while learning how to create delicious, nourishing meals using whole, plant‑forward foods.

What sets this experience apart is our deeper focus on food as medicine, land stewardship, and environmental awareness. In addition to cooking with farm‑grown produce, we thoughtfully incorporate wild harvested foods when available to educate participants about the nutrient‑dense foods growing all around us. This is part of our commitment to teaching about the environment at our feet and re‑connecting to the land as a source of both nourishment and wisdom.

We also use this opportunity to talk about exotic plant species that were introduced to our region from other parts of the world because they were viewed as beautiful or nutrient gaps. Without natural controls in our local ecosystem, they’ve spread aggressively. When appropriate, we incorporate certain invasive species into dishes as a way to slow their spread, support responsible land stewardship, and transform an environmental challenge into an educational moment.

Throughout the class, you’ll learn how to:

  • Cook seasonally and intuitively

  • use herbs, spices, and plant foods to build flavor and support health

  • Better understand the connection between soil health, food quality, and human well-being

This experience is about more than cooking a meal—it’s about cultivating awareness, community, and a healthier relationship with food, the land, and each other.

Come curious. Leave inspired. And never look at food—or the landscape around you—the same way again.

The Farm to Table class is held from May to October when the Doctor’s Farm Market is open. Each moth has a different health theme and global cuisine.

Each menu is a living expression of the land—designed not only to nourish, but to teach. Participants learn how to recognize these ingredients, understand their benefits, and bring them into daily life in simple, meaningful ways as we celebrate different cultures. Each months menu will feature a drink or mocktail, a soup or salad, a main course, and a dessert, all thoughtfully designed to align with the month's health focus and cultural cuisine.

Topic: Spring Renewal & Digestive Health
Cuisine: Japanese

They'll share the science underpinning soil health in gardening and farming and how it influences crops, livestock, and ultimately the human diet and human health. It turns out that what’s good for the land is good for us too.

Dr. Weiss will explore why a nontoxic, nutrient-dense, locally and conscientiously grown diet matters for both human and planetary health, and share the story behind the creation of Ethos Farm as a living model of farm-based healthcare.
